October 30, 2008 Fellow Chefs, The Club Chefs of Connecticut would like to recognize General Manager David Foster of Indian Harbor Yacht Club for his support, Michael Warfel, Food & Beverage Director, Executive Chef Tay McKamy and Sous Chef Todd McGarvey for their time, commitment and delicious cuisine. Before lunch we were taken on a surprise cruise by Captain Dustin to tour their beautiful harbor. When we returned there was a tasty selection of artisanal sandwiches, famous Indian Harbor chowder, grilled chicken and goat cheese salad with pomegranates and nuts, Lobster Salad filled brioche boules and a crunchy succulent prime rib carving. ”For dessert” James Biniaris, Owner of “Piece of Cake” treated us to an array of flavored bombs as he discussed his quality ingredients and imaginative selections of Ice Creams, Gelatos and desserts during lunch. There was much active participation from our group ensuring a successful completion to the day.
