October 2009 Fellow Chefs, Our latest excursion brought us to Jordan Paige “Fine Foods” in Branford, CT. The tour of their quaint facility had most of us wondering how they get all of this done in such a small space. The answer is dedicated and passionate individuals from owners Joseph and Jordan Laudano along with sales representatives Dominica Hagan, Renee Reignier, Paul D’Ambrosia and the rest of their talented team who worked tirelessly to put on a first class show. We had the pleasure of sampling an extensive amount of quality ingredients. Producers Nippon Shokken, Greek Island and Magnolia Kitchens offered innovative ideas for our menus. Nick Poccia of Bonewerks was on hand with many of his quality glaces, stocks and sous vide items. Afterward, we moved on to the beautiful New England coast where Captain Michael Infantino Jr. navigated us through the captivating, yet perilous waters of the Thimble Islands in Stony Creek. Jeremy Schaller of Schaller & Weber cooked up some steamy sausages and brats for the group while Jordan and staff passed around a wide variety of German bier to celebrate an Oktoberfest theme that was second to none! This dynamic duo has the hospitality business in their blood, being former owners of Home restaurant in Greenwich Village. Shinn Vineyards We then proceed to the award winning North Fork Table and Inn in Southold for a four course luncheon with matching wines prepared by the culinary team of Executive Chef Gerry Hayden and his wife, Claudia Flemming. Chef Hayden is the former Chef de Cuisine at Aureole and his wife Claudia was the Executive Pastry Chef at Danny Meyer’s Grammercy Tavern where in 2000 she was named the James Beard Pastry Chef of the year. www.northforktableandinn.com
