March 23, 2007 Dear Chefs, I would like to thank Executive Chef Michael Ruggiero and Mike Bajdechi, Clubhouse Manager of The Orienta Beach Club in Mamaroneck, and his entire staff for hosting the Club Chef's of Connecticut's March meeting and luncheon. The menu of oxtail ragu, Pan Seared Skate and Warm Apple Crumb Cake finished off a successful informative meeting. Our next meeting will be held at Shorehaven Golf Club (click here for directions)Tuesday, April 24th with our hosts Executive Chef James Rosenbauer and General Manager Erik Horwedel. Keep in mind that we are guests and that dress is business attire only. Paul Newman's Michel Nishan Chef Michel Nischan: Press, Author of "Taste" which won a 2004 James Beard Award, Chef-Owner of "The Dressing Room, a Home Grown Restaurant" at the Westport Country Playhouse with Chef James Rosenbauer will be providing a combination luncheon. Michele will speak with us on his thoughts and cuisine. Our own Jeff Perez has arranged through World Wide Wines an offering of Organic/Biodynamic wines to match the chef's sustainable cuisine!! Please bring payment of $35.00 per person to attend the seminar & luncheon. Checks should be made out to The Club Chefs of Connecticut.
