Fellow Chefs,

The Club Chefs of Connecticut would like to extend our thanks and appreciation to General Manager Brian Dwyer, Chef James Chizmadia and the rest of the Brooklawn team for an unparalleled effort in making the Club Chefs January meeting a triumphant success.

Chef James prepared a stylish menu of Foie Gras in an Herb-Salt Crust, Bistro Salad with Shredded Duck and Sherry Vinaigrette, Cast Iron Seared Wellington Farm Chicken and a selection of Fine Cheeses which ended our luncheon perfectly.

Thanks to our three guests, Bella Bella Gourmet’s Bob Ambrose, Wellington Farm’s George Oppenheimer and Michael Pelletier of Fountainhead Wines who spoke eloquently on behalf of their products, and to Creative Wholesale Meats Barry Schwartz and John Cuddy for providing the educational aspect of the day.

put together an exclusive day for us as we tour many Korean marketplaces and experience the vast ingredients and foods that they have to offer. Flushing Queens is considered home to many Korean’s immigrating into the United States.
