Fellow Chefs,

Once again we welcome in a new year, a chance to wipe the slate clean and start fresh! Before we put 2009 in the books, The Club Chefs of Connecticut would like to recognize all of our talented chefs who put their best foot forward in making our Showcase Gala Benefit its most successful fundraiser ever.  Thanks to your hard work, commitment and continued participation, our organization is healthy, strong and moving forward in the right direction.

Year 2009 took us on many new journeys, meeting interesting and passionate people, eating great food, drinking delicious wines and educating ourselves through networking and association. The final touch to our triumphant year was an evening at Bernard’s Restaurant in Ridgefield where we were warmly welcomed for our annual holiday dinner party. Thanks to Owners Sarah and Bernard Bouissou for creating such a festive atmosphere.

General Manager Brian Dwyer and Chef James Chizmadia have offered
their attractive facility for our first meeting of the season. Chef James and staff are eager to prepare our luncheon utilizing products donated by Bella Bella Farms, Wellington Chicken and Fountainhead Wines.

Bella Bella Gourmet’s Bob Ambrose has been producing superior quality Foie Gras from Sullivan, New York using the Crossbred Moulard Duck. Bob will be demonstrating a “Hands On” foie extraction while discussing their unique processes. George Oppenheimer of Wellington Farms “Best Bird in the Herd” will be on hand to speak about his young, free roaming chickens. Since 1987, Wellington Farms chickens have been hatched, fed and raised on farms located in Central Pennsylvania’s Amish Country. We will also be joined by Owner/Proprietor Michael Pelletier of Fountainhead Wines, as he leads us through a tasting of wines from the Gascony region of France that will be paired with our menu. Gascony, home of the Three Musketeers, Foie Gras and Cassoulet is an often overlooked region that has so much to offer. This will be a culinary journey not to be missed!!!

Members wishing to be more involved in the CCC may do so. We are opening up some new opportunities to participate and will be mentioning some of them at this meeting. Your thoughts and ideas are important for our organization to grow and move forward in the right direction, so stay involved and help make this our best year ever!
